The demo has been unrunnable since eafd1c1f deleted bot-bottle.demo.json
as a pre-YAML-migration artifact. demo-setup.sh still copied that file
under `set -euo pipefail`, so demo.sh and demo-record.sh both exited
non-zero before launching anything.
Rebuild the fixtures in the current per-file Markdown format. Bottles
are only read from $HOME/.bot-bottle/bottles/ — manifest/index.py
ignores a bottles/ dir in CWD by design (PRD 0011) — so setup now
installs into real config and pairs every write with a .demo-backup
that teardown restores. Teardown compares content before removing, so
a second run cannot delete the user's restored original.
Point the DLP probe at the bottle's own example.org route rather than
api.anthropic.com/dlp-probe. The provider-injected anthropic route
defaults to `redact`, which would forward a scrubbed request instead of
refusing; the declared route sets outbound_on_match: block so probe 3
stays the hard 403 the demo is showing off. Left at the default
`supervise` it would instead hold the request open for up to 300s
awaiting operator approval and stall the recording.
Also drop the stale pipelock naming from the tape (egress is the
gateway's own scanner now), fix demo.sh's ./cli.py invocation, and
pre-warm Dockerfile.gateway instead of the removed Dockerfile.git-gate.

`doctor` told users to run `./cli.py backend setup`. cli.py is a four-line
wrapper at the repo root that calls bot_bottle.cli:main, and it does not ship —
[tool.setuptools.packages.find] includes only bot_bottle*, so anyone who
installed rather than cloned has no such file. Confirmed against a real
install: the user's tree contains exactly one executable, `bot-bottle`, and no
cli.py anywhere, while doctor recommended `./cli.py` three times. Invisible in
development, where ./cli.py works fine from a checkout, which is why only a
clean-install test surfaced it.
The two entry points are the same code, so the fix is to name the one that
always exists. 141 replacements across 45 files: the runtime messages that
caused this, plus README, docs, PRDs, research notes and test prose, so nothing
teaches the invocation a user cannot run.
scripts/demo.sh is deliberately untouched — it *executes* ./cli.py from a
checkout, where that is the correct and available path.
Verified end to end: a sandbox install now reports
"Run: bot-bottle backend setup --backend=firecracker", and bot-bottle is on
that user's PATH. Unit suite unchanged against the pre-existing baseline.

Completes the de-sidecar cleanup: no live code, test, current doc,
script, or nix file mentions or is named "sidecar" any more. Only the
dated PRD/research docs keep the term as historical record (agreed on
the #385 thread).
- Rename `sidecar_init.py`→`gateway_init.py` was done earlier; this pass
sweeps the remaining descriptive uses: the egress / git-gate / supervise
components are the gateway's *daemons*, the shared container is the
*gateway*, the old per-bottle container was the *companion container*.
- Rename `tests/integration/test_sidecar_bundle_image.py`→`test_gateway_image.py`
and its class; update `docs/ci.md` + `tests/README.md` for the renamed/
removed integration tests.
- `SIDECAR_PORTS` shell var in `scripts/firecracker-netpool.sh`→`GATEWAY_PORTS`.
Full unit suite green (bar the pre-existing `/bin/sleep`-missing env
errors in test_gateway_init); docker integration — gateway singleton,
broker, real two-bottle multitenant isolation, and the gateway-image
build — all pass.

Squashes the demo-build arc: initial GIF + scripts, refactor to drive
recording through real cli.py, theme/timing tweaks, and the switch to
prompt-driven probes.
